Summer Berry Jelly

This is a really simple recipe for you to follow and let your little ones join in. Sugar free and full of mixed summer berries it even gets some 5 a day into your kids! Fruity and sweet what more could you want?

Summer Berry Jelly

This is a tasty, no added sugar recipe that children can help make and will love to eat. Perfect for using up homegrown summer fruit. Suitable for gluten and egg free. This jelly can be accompanied by coconut cream instead of the side portion of creme fraiche to be dairy free too.

Ingredients:

  • 1 sachet gelatine powder
  • 600ml apple juice
  • 800g mixed summer fruits: raspberry, strawberry, plum, currants

Method:

  1. Soak the gelatine in cold water
  2. Heat until it dissolves
  3. Cool slightly and add to the apple juice
  4. Slice the fruit into small pieces
  5. Pour the liquid over the fruit
  6. Chill until set

Serve with fromage frais
